
A TikTok cook with 131,500 followers on the platform has shared her top curry-making tip that will take your Indian dinner nights to new heights. Sobia Bashir, who has made a name for herself in online Indian cuisine cooking on YouTube and TikTok, demonstrated how her followers could cook a "proper" masala dish in their own kitchens using a very simple recipe.
She claimed: "Your chicken curry will never taste the same again after this masala". Filming her process from start to finish, Sobia stated that "this what you are getting wrong when you make a curry - if you want your chicken curry to sing then keep watching," drawing eager viewers in.

Sobia's recipe begins with finely chopping your onions, which are then "cooked down", before a "generous amount" of butter is added to the pan. The cook warned that this first step "takes time. You want [the onions to be] deep golden. That colour gives body to the curry - so don't rush it, just let it happen," she explained. She then mixed in garlic and ginger, continuing to suggest patience to allow the contents to "brown properly".
Next, she stirred a small amount of passata - "just enough to loosen things up" - and a splash of water, before slowing the hob down to a smaller flame to add in the spices. She explained her regular mix to be "garam masala, coriander, red chilli basa and salt". And whilst some cooks may opt to add the garam masala at the end of the process, Sobia stated that she strays from the trend due to the "grainy texture" it leaves, claiming how the spice fails to settle in. "Spices need to be cooked through, no shortcuts," she said.
To add "tang and depth," Sobia then added a spoonful of yoghurt and several pieces of chopped green chillies. The "magic" of her method is observing "when the butter or oil start to separate from the masala," explaining that this is when "you'll know it's ready to add your chicken, or whatever meat that you are cooking".
This viral method, which has gained over half a million times in under 24 hours, praises the home cook for her clear instruction and smooth results.
